The thing I love the most about this dish is its extreme simplicity. This is one of those dishes that is basically IMPOSSIBLE for you to mess up.
All you need are tomatoes, fresh basil, mozzarella cheese, EVOO, and a bit of ground pepper and salt (kosher, sea, “whatever floats your boat” salt).
I am a sucker for fresh basil and cheese, so the merging of the two is pure heaven. I didn’t learn to appreciate this until my recent trip to Italy where I was able to try this freshly made. That changed my perspective on this simple dish.
I’m not one for tomatoes — I’m pretty indifferent when it comes to them. If they are in, cool. If not, I’m not going to cry over spilled milk (I’m lactose intolerant so I shouldn’t be crying over any dairy really).
Final Verdict: This is something that you can whip up in a matter of minutes and have with wine and prosciutto (while watching Scandal on Thursdays). Try it and let me know what you think.
